Cleveland — Carnegie Food Hub is a takeaway one-stop shop that manages 30 small business kitchens, including Yanna’s DoughSpot.
Originally from the Caribbean West Indies, Ayanna Augustin grew up cooking food for her family every night. So he pursued his dream of opening a restaurant.
His solo exhibition offers homemade jerk chicken with a secret sauce and a menu reminiscent of his roots.
“We have homemade jerk sauce,” he said. “What’s in it?” I never say.
There is no limit to the possibilities of kitchen space, Augustin said.
“Each restaurant can have as many concepts as it can handle,” he said.
One effort turned into two when he launched a side operation called Big Starchy Bihhhh. This is testing a potato menu that hints at the taste of the island.
“I got a big overweight baked potato from an island girl like you,” she said.
One of the options you can choose is Wake-Up Bihhhh. This adds a bit of “dazzling highlights” featuring breakfast-style potatoes with melted cheese, turkey sausages, and fried eggs.
For an additional $ 5, clients have the option of asking Augustin to suspend work on their behalf. They can also upgrade to the “cry” option with fake tears to sell a bit for an additional $ 2 fee.
The Big Starchy Bihhhh has a warning label that tells you what’s in the top of the container.
“He’s my first customer,” he said. “So let’s warn them that it’s a big starchy Bihhhh.”
In addition to the fun food options that Augustin’s business offers to its customers, it also benefits from being part of a food hub.
“There are many benefits to being in a food center,” he said. “They have staff to help you manage your food. I just wanted to be able to run my business with a limited staff. And now I’m that staff.”
Employees this month want to be floating because they had to close at lunchtime due to limited orders.
“It’s my passion and I never give up,” he said. “If you don’t give up, you don’t have to start over.”
